Dubai, UAE, 24 November 2025 – Waldorf Astoria London Admiralty Arch, set to be a new landmark of modern British luxury, today announces its signature restaurants: Coreus by Clare Smyth and Café Boulud by Daniel Boulud, opening in 2026. The two globally-celebrated chefs, whose eponymous restaurants together hold seven Michelin stars, will define a new era of culinary excellence for the Waldorf Astoria brand in the heart of London.
The collaboration with Waldorf Astoria London Admiralty Arch to open Coreus and Café Boulud will create a world-class gastronomic destination in one of London’s most iconic landmarks. With Clare Smyth’s precision and innovation alongside Daniel Boulud’s timeless French flair, the opening will further Waldorf Astoria’s legacy of pairing culinary talent with extraordinary destinations, positioning Admiralty Arch to become the capital’s most talked-about dining address.
Coreus
Located in the former home of the First Sea Lord, Coreus will be Clare Smyth’s fine dining celebration of the United Kingdom’s bountiful seas, coastal regions and farms, created exclusively for Waldorf Astoria London Admiralty Arch.
The seafood concept aligns naturally with the maritime heritage of Admiralty Arch, and with a passion and dedication for working with British producers, Smyth will celebrate the diversity of local seafood and bring lesser-known varieties to the forefront of the dining experience. The menus will feature sustainably sourced seafood, the highest-quality meat products from family farms, local oysters and vibrant vegetables.
Clare Smyth commented: “I’m honoured to be opening Coreus at Waldorf Astoria London Admiralty Arch. Coreus will be the epitome of a modern fine dining restaurant; relaxed, informal luxury. The name Coreus combines Core, meaning “heart” in many languages, whilst Us, symbolises unity and connection. It reflects the passion and heart of everything we do, along with the collaboration between the team, guests and producers.”
Smyth will also be bringing her intimate and stylish Whiskey & Seaweed bar concept to Waldorf Astoria London Admiralty Arch. The bar takes its name from the cocktail inspired by Smyth’s iconic dish, ‘Potato and Roe’, at her Notting Hill venue. It will feature a vast selection of curated whiskies from every distillery in the UK, as well as an extensive cocktail menu and wine list.
Café Boulud
Café Boulud marks Chef Boulud’s much-anticipated return to London, where he will bring his timeless French sensibility to Waldorf Astoria London Admiralty Arch. The all-day dining restaurant will feature a breakfast offering of Café Boulud classics, signature pastries and speciality drinks and afternoon tea, followed by lunch and dinner menus highlighting the restaurant’s hero dishes.
Café Boulud will be located on the rooftop of Admiralty Arch, with an open south facing terrace showcasing unrivalled views across London landmarks and down The Mall directly towards Buckingham Palace.
The Café Boulud concept is a continual exploration of Boulud’s most fundamental culinary inspirations and highly personal, soulful expression of his craft. With each season, new variations appear, harmonising tradition and deeply-rooted French classicism and technique with globally-inspired culinary innovation.
