The Italian hospitality leader brings more than 25 years of business experience, including a decade in F&B leadership, to the restaurant’s contemporary lifestyle concept at The St. Regis Al Mouj Muscat Resort.

Muscat : Roberto’s Muscat, the multi-concept fine-dining Italian restaurant at The St. Regis Al Mouj Muscat Resort, has named Ilario as General Manager. His career spans more than 25 years across Italy, Indonesia and Oman, with the past decade dedicated to leading and developing hospitality and F&B concepts. He now brings that breadth of experience to Roberto’s contemporary lifestyle concept, centred on modern gourmet Italian cuisine, exceptional mixology and world-class entertainment.

Originally from Milan, in Lombardy, Northern Italy, he brings a distinctly Italian understanding of hospitality. It took shape in his early years in Italian restaurants, where he saw the business from every side: as a pizza chef, across the back of house, behind the bar and coffee counter, and in service on the floor. It later grew through entrepreneurship and international leadership. After running his own businesses in Italy, he spent eight years in Indonesia, across Lombok, Bali and Jakarta, developing restaurant, beach club and resort projects and building local teams around a strong sense of service and identity.

In Oman, Ilario Prospero spent two years as Multi-Outlet Restaurant General Manager at a five-star luxury hotel in Muscat, joining the opening team behind the international hospitality group’s debut in the Sultanate. His remit spanned the hotel’s Italian restaurant and bar alongside its beachfront lounge, working closely with the culinary and wider hotel teams to shape the concepts from opening. During his tenure, the Italian restaurant rose to the number one position among Italian restaurants in Muscat on TripAdvisor, while its culinary programme included two Michelin-starred guest chef dinners in 2025.

The experience also gave Ilario a close understanding of Oman’s hospitality landscape and the considered, highly personalised approach to service valued by its local, regional and international guests. He now brings that perspective to Roberto’s, with a focus on refining the guest experience and carrying the restaurant’s momentum forward in Muscat.

“I am joining Roberto’s at a very exciting point in its story. There is already a strong identity and a talented team behind it, so the opportunity now is to build with purpose. For me, that means keeping Roberto’s unmistakably Italian while continuing to refresh the experience in ways that feel relevant to Muscat and its people, whether they are discovering us for the first time or returning as regulars,” said Ilario Prospero, General Manager of Roberto’s Muscat. “I look forward to getting to know our guests even better and, together with the team, continuing to write Roberto’s story in Muscat in a way that feels personal, welcoming and true to who we are.”

In his new role, he will oversee the full Roberto’s experience, from its 82-seat dining room and 24-seat cooled alfresco terrace overlooking the water to the 32-seat Scala Lounge, with its crafted cocktails and live entertainment. He will also guide the programme of concept brunches, seasonal activations and four-hands dining collaborations that give guests new ways to experience Roberto’s throughout the year.

With Ilario joining the team, Roberto’s will continue to deliver a cosmopolitan experience anchored in Italian tradition, building on its refined yet warm approach to hospitality while strengthening its place as a distinctive destination for Italian and Mediterranean dining at Al Mouj Muscat.
