For one night only, Dubai’s hidden speakeasy GABA joins forces with Chef Hadrien Villedieu of Chez Wam for an extraordinary culinary experience on Wednesday, November 12, from 7 PM to 11 PM. This exclusive collaboration will see two culinary worlds collide, where Colombian passion meets French finesse in a fully curated evening of food, drink, and music designed to captivate every sense.
The collaboration between GABA’s Head Chef Esteban Torregrosa and Chef Hadrien Villedieu will present a multi-course tasting menu featuring a progression of snacks, starters, mains, and desserts, each reimagining traditional Latin and French flavors with modern technique.
Guests can look forward to vibrant dishes such as the Boeuf Tartare “Ajiaco”, wrapped in phyllo and topped with caviar oscietre; the Tuna Ceviche “Costeño”, with coconut leche de tigre and watermelon; and the 48-Hour Short Ribs “Sancocho”, slow-braised and served with plantain purée and pickled papaya. The evening concludes with a duo of indulgent desserts, including the 3 Leches Pain Perdu with guava custard and dulce de leche ice cream, and the Tropical Nama, a silky mango–passionfruit chocolate creation.
Each course will be paired with a limited-edition cocktail menu curated by GABA’s award-winning bar team, featuring tea infusions, tropical botanicals, and premium spirits that mirror the night’s cultural fusion.
Adding a soulful layer to the night, guests will enjoy a live performance by Imelda Gabs, the Belgian-Congolese-Swiss artist known for her rich vocals, genre-blending sound, and emotive piano. Her music will seamlessly weave between Latin soul, French jazz, and world influences, guiding the energy of the evening from dinner to late-night ambience.
