Chez Wam Welcomes Chef Álvaro Clavijo of El Chato from Bogotá, Colombia for Coolab Vol.7

Dubai : Dubai’s dining scene is set for an extraordinary moment [dont like the word moment, can be more exciting] this October as Chez Wam proudly announces Coolab Vol. 7, a two-night collaboration with Chef Álvaro Clavijo of Bogotá’s celebrated El Chato, ranked No.54 on The World’s 50 Best Restaurants.

Taking place on October 21 and 22 from 6PM onward, this exclusive event unites Chef Clavijo’s modern Colombian flavours with Chef Hadrien Villedieu’s French-Middle Eastern “fun dining” approach. Together, the chefs will present an inventive set menu that pushes boundaries while paying tribute to heritage and ingredient-driven cuisine.

Guests can expect imaginative plates that spark conversation, from Colombian-inspired creations like Arepa 2.0 with 48-hour confit short ribs and seared foie gras and Trout with hay and arracacha, to playful Chez Wam signatures reimagined. The experience concludes with bold desserts such as the Corn Bomba with caramelised popcorn and corn-tonka bean ice cream. A sweet finale that perfectly encapsulates the collaboration’s spirit of creativity and surprise.

Available for two nights only, Coolab Vol. 7 is set to be a must-attend event for Dubai’s culinary insiders and global gourmands alike. With limited seating, early reservations are essential.
