Founded by Eva Halasa and her daughters Emilie and Lilian, Three by Eva celebrates heritage, family and the reinvention of tradition. At the heart of Three by Eva is a simple philosophy; embracing the humble ingredients of flour, water, and salt, which form the foundation of their menu and reflect their dedication to purity and purpose.
Eva Halasa, the visionary, the heart and soul behind the concept, infuses the restaurant with her deep Jordanian roots. Lilian, the creative force, curates the finer detail and brings the concept to life. Emilie, the culinary innovator, reimagines classic Bedouin recipes, crafting bold dishes inspired by her passion for sourdough.
Each dish at Time Out Market, including creations exclusive to the Market, reflects the journey of Three by Eva – where they’ve been and where they’re headed. Highlights include the Falafel with Tahini and Chilli, boasting a perfectly crispy exterior and a light, flavourful centre, and the Za’atar Man’ousheh, topped with a signature blend of za’atar. To complete the experience, indulge in the Knafeh – a sweet tradition combining cheese, delicate syrup and a pistachio topping.
