Chef Hoon has built an impressive career across Australia and Dubai, where his mastery of modern and traditional Japanese, Korean, and Italian cuisines has earned him recognition in both fine dining and casual dining spheres. His diverse background is highlighted by leadership roles in esteemed establishments such as Zuma Dubai, where he served as Head Chef, and his most recent ventures as Director of Nonda and Soka in Brisbane and the Sunshine Coast, respectively.
Hoon’s culinary journey includes working at Honto, where his contemporary approach to Japanese dining led to the restaurant being awarded the prestigious Good Food Guide’s One Hat in 2019. His work at The Calile Hotel and Level One & Electrahouse in Adelaide also earned him accolades, such as the Restaurant & Catering National Awards for Best Asian Restaurant. His leadership has been marked by innovative menu development, restaurant design, and exceptional kitchen management, positioning him as one of the leading culinary talents in the industry.
