Starting from AED 75 per dish and part of INA’s ‘Masters of Fire’ Chef Series, where eight talented chefs touch down at INA over eight months, November’s edition continues to unite the world’s most innovative fire-focused chefs for a one-of-a-kind culinary collaboration

Following the successful launch of INA’s Masters of Fire Chef Series in October, INA is now welcoming Stephen Moore, Co-owner and Culinary Director of Shelter Pererenan, Bali, for an exclusive two-night takeover on November 12th and 13th. This bold and soulful a la carte experience will celebrate the art of fire, char, and pure flavour in its most primal form, making it an unmissable event on Dubai’s culinary calendar.

INA’s Masters of Fire series showcases Eight Chefs Over Eight Months, each collaborating with INA’s Chef Glen Ballis to present an immersive, flame-led dining experience. The series brings together some of the world’s most visionary chefs, each renowned for their mastery of open-flame cooking, to create unforgettable menus inspired by instinct, craft, and connection.

For the upcoming November edition, Chef Stephen Moore joins the line-up for a two-night-only epicurean adventure. A British-born culinary force with an impressive career spanning acclaimed restaurants in Sydney, London, and Bali, Moore has made his name at Shelter Pererenan, one of Bali’s most sought-after dining destinations. At Shelter, he leads a kitchen that captures the essence of contemporary Middle Eastern and Mediterranean flavours through the primal energy of fire. His food is an expressive balance of heat, texture, and soul, with flame meeting finesse in every bite.

Moore’s creative journey has seen him helm kitchens at world-renowned restaurants across the globe before finding his culinary rhythm in Bali. His signature dishes, such as flame-grilled ribeye, stone-baked flatbreads, and inventive vegetable sides, reflect his belief in the raw beauty of cooking over open flame.

Across two exclusive evenings, guests can expect an evocative a la carte menu crafted collaboratively by Stephen Moore and Chef Glen Ballis, celebrating the shared philosophies of INA and Shelter. The experience will be a sensory exploration of flavour and fire, highlighting fresh, seasonal produce prepared with integrity and intention. Expect refined plates that draw you into the rhythm of the grill, complemented by INA’s signature energy, elemental ambience, and soulful atmosphere.

This sensory culinary journey begins with standouts such as the delicate Tuna Tartare served with squid ink wafer as well as the signature Shelter Pide, flame-cooked to perfection and decorated with fresh figs, smoked dates, pumpkin, and toasted hazelnut. As for the mains, diners can look forward to the Ash Grilled Barramundi on the Plank paired with market mushrooms and roasted chicken fat sauce, or the Wood Grilled Wagyu served with hurricane salsa, crispy potato chips, and konbu salt. Finally, serving a fiery twist on a decadent dessert, the bold Wood Roasted Chocolate delivers the perfect indulgent bite with salted caramel gelato and sumac honey.
