A Founder’s Vision – It Began with a Diary
It started, as most love stories do, with a humble Diary.
For years, Anju Gautam, Founder, travelled across continents, not just tasting food, but feeling its essence. From the bustling street stalls of Bangkok to the quiet cafés of Paris, from intimate Tuscan kitchens to fragrant homes in Jalandhar, she collected moments, flavours, aromas & tales, poured into the sap-sweet pages of her leather-bound diary. A heartfelt curation of original recipes, memories, sketches, and stories shaped by instinct and nostalgia. From this deeply personal journal, Mann Marzi was born. Co-crafted with Chef Nimish Bhatia (COO and Director of Cuisines), a culinary virtuoso known for weaving memory into plates, Mann Marzi is a delightful dialogue between turmeric and truffle, Deccan qormas and Moroccan tagines, ancient grains and modern imagination.

Curated by Aman Dua, a flavour alchemist, known for his genre-defying approach, the Liquid Degustation Menu mirrors the five elements of nature – earth, fire, water, air, and ether. At Noir, cocktails don’t follow a recipe; they trail emotion. Guests are invited to sip their way through essence, with each drink unfolding like a memory, unpredictable and alive.
“To me, the art of cocktail making is not the trick of mixing spirits, but the study of nature’s intent. Every ingredient carries a memory, a story, and a rhythm on the palate. At Noir, I have sought to bring that philosophy to life, listening, distilling, and composing. From the ancient wisdom of apothecaries to the quiet clarity of water, each drink is crafted as a heartfelt conversation between element and essence, guided by restraint, and complete only when it lingers on the palate like a happy song.
