For one evening only, an eco-culinary delight featuring Japanese-Korean dishes await guests
Dubai, United Arab Emirates, October 2023: Akira Back prepares to celebrate World Vegan Day on November 1, 2023, with a one-night-only vegan zero-waste menu. The highlight of the evening’s six-course menu will be locally-produced mushrooms, sourced from a premium specialty mushroom farm based in Abu Dhabi, that will form the basis of each tantalizing dish presented. For AED 399 per person, Akira Back promises an eco-conscious gastronomic experience, demonstrating the endless possibilities of vegan Japanese-Korean cuisine.
Guests are invited to savor a meticulously crafted menu, offering both exquisite flavors and the assurance of a conscious effort to minimize waste. Dedicating the evening to the versatility and sustainability of mushrooms, Akira Back’s Head Chef, Giovanni Ledon, will stretch the limits of creativity with an innovative six-course menu. The evening will start with an Eringi Mushroom Pizza, topped with savory umami aioli, shisho leaves, and a fragrant winter white truffle. This will be followed with a citrusy Pink Oyster Mushroom Creviche with a shisho gremolata dressing, juicy heirloom tomatoes, and crispy quinoa. Topping off the entrees is a Compressed Lion’s Mane Bossam, which is a unique spin on a traditional Korean dish that replaces the meat with nutty Lion’s Mane mushrooms.
Next, guests may indulge in a vegan nigiri sushi selection, each masterfully crafted with mushrooms at various stages of the cooking process. The evening’s apex is marked by the menu’s main course: a creamy and aromatic Barley Risotto, which exchanges the traditional risotto rice for pearl barley, decorated with nasturtium and accompanied by a succulent eringi mushroom scallop, smoky eringi bacon, and a Szechuan beetroot foam. Bringing this sustainable soirée to a close will be the Chocolate Truffle composed of a shitake-infused Valrohna chocolate paired seamlessly with a toasted vanilla gelato and a refreshing date coffee
