Rooted in Japanese culinary artistry and elevated by Peruvian flair, the new dishes celebrate the season with a twist

Riyadh – Kuuru, Riyadh’s pioneering Japanese-Peruvian fusion destination, unveils its new menu – an artful expression of Nikkei cuisine that blends Japanese precision with Peruvian vibrancy. Featuring seasonal inspiration and sustainably sourced ingredients, the collection embodies summer’s essence through vibrant, sophisticated flavors that celebrate cross-cultural culinary artistry.

This special of this month is the Beef Gyoza – a bold combination of tender short ribs, nitsuke, rocoto and a zesty yuzu sauce, finished with crispy potato and fresh cilantro for a perfectly balanced bite. Ceviche lovers will delight in the Ceviche Limeño, featuring Akami bluefin tuna in a rocoto leche de tigre, crowned with silky avocado and crisp chifles.

Cold appetizers such as the Chirashi Box offer a refined selection of chu-toro, scallop, salmon and lobster tartare, layered with avocado and ponzu sauce then crowned with luxurious Oscietra caviar – a vibrant expression of flavour, while the Panca Hitoaji offers a striking purple corn cracker crowned with tender Wagyu beef and zesty avocado. Hot options include the Hotate Aburi, where seared scallops are elevated with ají amarillo sauce, grana padano, and a striking black tempura crunch.

The Nikkei-style nigiri shines with creations like the Tako Oribu, where tender octopus meets a rich olive sauce, avocado, cilantro and crispy  tapioca crackers – an elegant combination of Mediterranean and Peruvian influences. From the makimono selection, the Lobster al Fuego hand roll offers a bold combination of shrimp furai, avocado, and cucumber, layered with grana padano and a rich lobster tartare for a satisfying balance of crunch, creaminess and umami.

To cool the summer heat, Kuuru introduces refreshing house-made beverages like the Yuzu Road Trip, an invigorating blend of coconut, milk oolong and ginger syrup alongside the vibrant Hinode Punch, which combines green tea and jasmine with passion fruit, finished with delicate strawberry caviar. For a sweet finish, indulge in Coconut Kumo, a tropical harmony of coconut sorbet, almond coconut, praline and airy coconut foam.

Beyond flavour, Kuuru remains committed to ethical sourcing, local partnerships and authentic craftsmanship. The new menu features seafood sourced from the Red Sea, fresh local produce, and Peruvian ingredients flown in directly to preserve heritage and quality.
