A Contemporary Dessert Narrative Inspired by the Flavours, Memory, and Soul of the UAE
Continuing its mission to redefine the boundaries of dessert-led fine dining, Brix Journey unveils its latest immersive experience, The Voice of the Emirates – a four-course dessert journey inspired by the flavours, ingredients, and cultural soul of the UAE.
With The Voice of the Emirates, Brix Journey turns its focus inward, celebrating local heritage through memory, texture, and taste, reinterpreted with contemporary finesse. At the helm is chef Carmen Rueda Hernandez, named MENA’s Best Pastry Chef 2025 by W50B – known for her fearless creativity and mastery of unconventional techniques.
This four-course experience, paired with non-alcoholic beverages, is designed as a sensory narrative drawing inspiration from Emirati staples such as dates, salicornia, goat milk, carob, sesame, Arabic spices, and coffee culture, each course unfolds as a layered expression of heritage, reimagined through modern pastry artistry. The Voice of the Emirates unfolds progressively, with each course revealing a different interpretation of local ingredients and culinary traditions. From marine and coastal influences inspired by salicornia and sea elements, to pastoral notes drawn from goat milk, rice, and honey, the journey moves through themes of land, heritage, and seasonality before concluding with a final course centred around carob – a historic ingredient reimagined as a refined alternative to chocolate. Each course is paired with a thoughtfully crafted non-alcoholic beverage, designed to mirror the narrative and rhythm of the menu.
Rather than replicating familiar flavours, the menu translates them into unexpected forms – from date-seed coffee crafted without coffee beans, to carob chocolate that challenges the very definition of chocolate itself. Ingredients are transformed, textures are reworked, and flavours are elevated, offering guests a new way to experience the essence of the Emirates.
