Flame and Flavour: Experience the Art of Warayaki

Acclaimed Restaurateur and Chef Ross Shonhan is set to unveil Strawfire, his latest culinary venture at the prestigious Emirates Palace Mandarin Oriental in Abu Dhabi. Opening on 15 November 2024, this immersive dining experience promises to ignite the gastronomic landscape by introducing the art of Warayaki cooking with contemporary design.

Strawfire celebrates the rich heritage of Warayaki, a traditional Japanese cooking technique originating from the Kochi prefecture, where food is prepared over straw-fired flames. This method infuses each dish with a distinct smokiness and deep flavour, creating a sensory experience that is both unique and memorable. Under the guidance of Chef Ross Shonhan, Strawfire’s menu will feature a curated selection of dishes that highlight the freshest ingredients, all cooked over the open flame.

The restaurant is a tribute to Japanese culture and craftsmanship, featuring five distinct dining spaces. Among these is the Toyama Private Dining Room, named after the picturesque Toyama region of Japan. This room showcases the largest synthetic Shimenawa rope ever created globally, handcrafted in Toyama and transported to Abu Dhabi, a symbol of sanctity and protection. The 7.3-meter-long, 830-kilogram rope is suspended above the dining table, creating a dramatic centrepiece that honours Japanese tradition.

The Toyama room walls and ceiling are covered with hand-painted silk inspired by Japanese artworks. These include the gold leaf-embellished 17th-century masterpiece ‘In and Around the Capital’ and scenes of rural life by renowned artists such as Utagawa Hiroshige and Katsushika Hokusai. The room’s design invites guests to embark on a journey through time, engaging in meaningful conversations and savouring the rich history and artistry of Japan.

Upon arrival at Strawfire, guests will be greeted by the Tsukimi Lounge, an immersive space reflecting the serenity of a full moon harvest scene. The main dining room, with its open grill centre stage and soft golden drapery symbolising dancing flames, sets the stage for the dining experience. The restaurant’s interior design, complemented by artisan Kumiko panels and bespoke furnishings, transports diners into the world of Warayaki cooking.

Strawfire will offer a diverse menu designed to cater to all palates. Guests can choose from the à la carte selection, a signature tasting menu, or the Chef’s Omakase menu all complimented by the live entertainment, with a DJ playing Jazzy House and NU Disco. On Fridays and Saturdays, a live jazz band will accompany the DJ.

Chef Ross Shonhan brings a wealth of experience and creativity to this new venture. As the mastermind behind Netsu Dubai, the acclaimed Japanese Steakhouse, and with a background that includes roles as Executive Chef at Nobu Dallas and Zuma London, as well as founding the popular Bone Daddies, Flesh & Buns and Shack-Fuyu in London, Shonhan is renowned for his innovative approach to Japanese cuisine.

With the opening of Strawfire on 15 November 2024, tastemakers and culinary enthusiasts can look forward to a brand-new sensory dining experience in Abu Dhabi’s most iconic location.
