Chef Reif Othman and Chef Jun Tomioka welcome Chef Shun Sato and Chef Fumiyuki Kinsu of acclaimed Hong Kong and Tokyo based modern Japanese bistro CENSU for an eight-course, one-night-only collaboration at Reif Japanese Kushiyaki.

Dubai : Reif Japanese Kushiyaki, Dubai’s homegrown cult favourite known for flipping Japanese flavours on their head, is adding a new chapter to its story. On 14 February 2026, from 6.00 p.m. onwards, Chef-owner Reif Othman and Chef Jun Tomioka will open the Dubai Hills kitchen with Chef Shun Sato, and Chef Fumiyuki Kinsu, the creative forces behind Hong Kong and Tokyo’s wabi-sabi Japanese restaurant CENSU, for an eight-course collaboration built around fire, texture and a shared love of breaking the rules.

Both creative leads speak the same language: unconventional Japanese with a side of street culture. Reif has built his name on casual-cool rooms, smoke, char and sandos that feel as collectible as his sneakers, while Sato has turned CENSU into a sensory playground where food, music, fashion and design are treated with equal respect. Bringing them together in Dubai Hills means one thing: a tight room, an open kitchen and two perfectionists pushing each other for one night only.

The menu, priced at AED 550 per person excluding drinks, will be a limited-run tasting sequence created just for this night. Guests can expect plates that bounce between Tokyo, Hong Kong and Dubai including Reif’s aburi amadai with yuzu kosho relish and umeboshi jam, alongside CENSU’s wagyu with smoked wasabi soy. Each course built around instinct, balance and umami, with team Reif and CENSU taking turns to put their stamp on the ingredients. This isn’t the kind of dinner where chefs hide in the kitchen; they will be on the floor, dropping dishes, telling stories and explaining why something looks a little “perfectly imperfect”.

For Sato, who has been rewriting the rules of Japanese cooking in Hong Kong with dishes that channel his time in Australia and beyond, the night marks his first time cooking for guests in the Middle East, and his first time stepping into Reif’s Dubai universe. For Reif, it’s another step in building his own creative world: a chef brand that sits as comfortably next to streetwear and design as it does next to a robata grill.

Happening on 14 February, this is not a Valentine’s dinner. It’s a call-up for the anti-tradition crowd, the guests who’d rather trade roses for rare collaborations, who care more about what’s on the playlist and in the glass than what’s on the greeting card.
