The traditional Saleeg dish is a great way to immerse yourself in the flavors of Hijaz

 

Riyadh, Saudi Arabia-: MAIZ, a unique fine-dining concept that brings authentic Saudi cuisine in a thematic Saudi Arabian cultural setting, welcomes guests to unique culinary experience at Bujairi Terrace, a new fine-dining destination developed as part of Diriyah Gate Development.

Inspired by the energy of the sun, the warmth of the desert, and the traditions of Saudi Arabia cuisine, Maiz invites visitors to embark on an exceptional journey in Saudi flavours, innovative drinks, and unparalleled hospitality all throughout the day.

As one of the most popular Saudi dishes served at Maiz, Saleeg is the one that you will never be able to resist! It is prepared using simple ingredients in no time and we find that it is absolutely popular in Saudi households, and has become very popular throughout the Arab world.

This dish originated in the Hijaz region, where it is widely regarded as a national dish, particularly in the city of Taif where it is very cold all year round, and became well-known since it is warm and filling for people in Taif. It is made with rice (usually long-grain), buttermilk, olive oil, and spices like cardamom pods, salt, pepper, cinnamon, bay leaf, and mastic, Generally, chicken, beef, or lamb are the meats that are used in Saleeg.

A traditional large plate called a Tabasi is usually used for serving Saleeg, and the roasted meat is normally placed on top of the rice. This dish is usually served with Daggus salad, a spicy tomato sauce, and ghee. Daggus salad is usually made with onions, coriander, tomatoes, lemon, salt, black pepper, olive oil, and red chilies.

Maiz menu also has a wide range of Saudi dishes like Goursan and Kabsa. Guests can savor the soups, appetizers, dishes to share, Maiz charcoal grills, sides, and a number of Saudi traditional sauces. A good cocktail is all about sweetness, which is why you should try some of the ingredients from the Saudi sweet collection like Maqushoosh and Gours Ogaili.

Following its official opening in December 2022, the restaurant also offers a “Maiz at Home” service, providing an exclusive, fine dining experience in the comfort of the client’s home with custom event menus and tailored-made packages to suit occasions of all kinds.
