The tasting menu presents a modern Korean journey shaped by winter seasonality, premium ingredients and Chef Chanoh’s artistic sensibility.

The evening opens with two composed bites. A shrimp preparation finished with Korean seaweed sauce and a warm rice course layered with gamtae seaweed and pickled mushrooms. Both set the foundation for a menu guided by clean flavours and depth without heaviness.

The first course features uni and scallop with a gentle soy glaze inspired by coastal Korean flavours. This is followed by butter poached lobster paired with a deeply savoury doenjang sauce that combines natural sweetness and fermented richness. A later course highlights slow braised Korean short rib served with aged white kimchi, offering an elegant interpretation of galbijjim.
