The Cantonese Journey menu is available only during the month of June at the one Michelin star Hakkasan Dubai at Atlantis, The Palm.

DUBAI, United Arab Emirates – During the month of June, the award-winning Hakkasan Dubai is expanding its exquisite offerings with a new Cantonese Journey menu from Executive Chef Andy Toh, priced at AED 488 per person. Filled with rich flavours and seasonal products, the menu is a culinary tribute to the summer season, with a nod to sustainable and local ingredients.

Renowned for its fusion of traditional Cantonese cuisine with a contemporary flair, each dish has been thoughtfully crafted taking all steps into consideration. Starters begin with a double-boil chrysanthemum chicken soup, with chicken locally sourced from Al Ain farm. This is followed by a roasted sesame chicken roll featuring fresh mangoes in season from India, with the bones from the chicken in this dish used to make the soup for the first starter. Guests can then tuck into poached Shanghai dumplings with crab meat and prawn sourced from the UAE.

The mains feature an MSC certified grilled Chilean seabass with a traditional Cantonese king soy glaze, a wok-sear locally sourced tiger prawn with Chef Andy’s special XO sauce inspired by his mother’s recipe, and a stir-fry lamb loin served with seasonal white asparagus, heirloom carrots and a spicy garlic sauce. The sides also utilise ingredients from other dishes with the Chilean seabass bones creating a stock base to cook the stewed pak choi and mushroom enoki, served alongside a fried trio of organic wild rice. The menu ends on a sweet note with a dessert featuring Yunnan tea and seasonal peach from Japan.

In alignment with the upcoming Sustainable Gastronomy Day on 18th June, the Cantonese Journey menu underscores the importance of sustainable food items and designing menus with this in mind. Diners are invited to join in celebrating this global observance by indulging in dishes that are as good for the planet as they are for the taste buds.

Chef Andy Toh has worked with Tao Group Hospitality for 13 years. He was promoted as Executive Chef Middle East in 2016 and most recently achieved the status of Corporate Chef of Hakkasan, Tao Group Hospitality in February 2024. Celebrated for his use of traditional techniques with contemporary results, Chef Andy’s food celebrates the very best ingredients to highlight Hakkasan’s authentic yet modern philosophy.

Priced at AED 488 per person, the new Cantonese Journey menu is available from Saturday 1st June until Sunday 30th June from 6:00pm to 11:00pm. Guests are invited to try the latest menu in a relaxed yet vibrant atmosphere before Hakkasan temporarily closes for the month of July. The restaurant will reopen on Thursday, 1st August and will be taking provisional reservations from Wednesday, 31st July onwards.
