A pioneering step towards sustainable dining
Canopy by Hilton Dubai Al Seef proudly announces the launch of the Skafos Hydroponic Farm, an innovative, on-site urban farm designed to enhance sustainability and redefine the dining experience at the hotel’s signature waterfront restaurant, Skafos. The new initiative underscores Hilton’s continued commitment to reducing its environmental impact while providing guests with the freshest, locally grown produce.
Located at Skafos, the hydroponic farm currently produces around nine kilograms of fresh greens and herbs daily, cultivating 28 different varieties of plants, including lettuce, mint, thyme, basil, and an array of microgreens. All produce is grown using advanced hydroponic technology, a soil-free system that relies on nutrient-enriched water and allows for year-round cultivation in a fully controlled environment.
The freshly harvested produce will be used not only at Skafos but also across the cluster’s hotels, Canopy by Hilton Dubai Al Seef, Hampton by Hilton Dubai Al Seef, and Al Seef Heritage Hotel, Curio Collection by Hilton, integrated into à la carte dishes and breakfast buffets. The initiative is expected to supply up to 50% of the hotels’ daily produce needs, significantly reducing external sourcing and helping lower the overall carbon footprint.

It’s a true expression of our farm-to-table philosophy and our commitment to creating greener hospitality experiences.”
Designed to complement the architectural character of the hotel, the facility features energy-efficient LED lighting and advanced climate control systems that ensure optimal growing conditions year-round, even during Dubai’s hottest months.
Beyond its culinary benefits, the Skafos Hydroponic Farm will also serve as an interactive experience for guests and the community. The hotel’s culinary team plans to host monthly Chef’s Table events amid the lush vertical farm, complete with storytelling, harvest demonstrations, and bespoke seasonal menus, offering an immersive celebration of sustainable dining.
