Helmed by award-winning chef Björn Frantzén, the restaurant formerly known as Studio Frantzén evolves into a brasserie concept, aligning with its global sister venues
Dubai – Studio Frantzén reopens for the new year as Brasserie Frantzén, marking its evolution within the Frantzén Group’s global brasserie collection. Guests visiting Björn Frantzén’s first Dubai outpost can now experience the venue alongside a reimagined menu that embodies the relaxed yet refined spirit of brasserie dining.
The critically acclaimed Swedish chef, Björn Frantzén, has long believed that exceptional food should be enjoyed in comfortable, unpretentious environments. With his culinary discovery rooted in a defining brasserie dish, the evolution to Brasserie Frantzén is a natural progression, with a new menu that delivers unforgettable dishes with true Frantzén finesse. To begin, guests can relish the moreish ‘lobster roll’, featuring perfectly cooked lobster served in a brioche bun and topped with spicy mayonnaise; the light yet flavoursome ‘yellow beetroot’, paired with mushrooms, walnuts and beurre blanc; as well as the ‘beef carpaccio’ topped with foie gras, orange, roasted pumpkin seeds and ponzu sauce, among other starters.
Mains include the ‘veal schnitzel’, paired with veal jus, whipped umami browned butter and grilled lemon; a dish originally created at Björn Frantzén’s gastropub, The Flying Elk. Other highlights include the ‘mussels à la crème’, a French brasserie must-have featuring a creamy mussel sauce, grilled onion, parsley and jalapeño mayonnaise, as well as the ‘wagyu beef burger’ topped with crispy onions, pickled shiitake, Japanese mustard emulsion and cheddar cheese, as well as ‘wood-fired grilled celeriac’ with truffle and cabbage jus. A visit to Brasserie Frantzén would not be complete without trying the steak paired with pepper sauce, mirroring the traditional steak frites dish that originally inspired Björn Frantzén to become a chef many years ago.
To conclude the night, guests are invited into the tempting candy room, where they can hand-select indulgent desserts. Paired perfectly, wine enthusiasts can explore the cellar, which houses over 1,300 labels, ranging from boutique producers and internationally acclaimed labels from 15 countries to Dubai firsts.
With a resident DJ playing daily, guests can look forward to arriving early and leaving late at this bustling brasserie. As guests revel in a mix of genres, from classic rock hits like Guns N’ Roses to timeless tracks from The Smiths, they can unwind at the 40-seat bar, which offers a curated selection of Nordic-oriented cocktails with a Björn twist, alongside spirits crafted with premium Nordic ingredients, such as rhubarb, sea buckthorn and blueberries.

Weekly happenings at Brasserie Frantzén
Brasserie Frantzén, continues to welcome guests every Saturday and Sunday from 12:30pm to 4pm for ‘The Luncheon’, which offers a two-course menu with a side for AED 195, alongside a curated beverage package featuring wine, cocktails, champagne, and mocktail options for an additional AED 245.
The bar at Brasserie Frantzén continues to host its ‘happiest hour’, the perfect spot for post-work drinks, weekend catch-ups, or a pre-dinner tipple – guests can enjoy a curated menu of six classic cocktails for just AED 50 each from 5pm to 7pm daily. Highlights include Brasserie Frantzén favourites such as the Negroni, Tommy’s Margarita, Aperol Spritz, Lychee Martini, Daiquiri, and Old Fashioned; all served at Brasserie Frantzén’s effortlessly stylish bar. A selection of elevated French-inspired bar bites infused with Asian flavours are also available, starting from AED 45. Dishes include veal tartare toast, short rib beef skewers, gougères made with choux and aged cheese, crispy potatoes topped with sour cream, vendance roe and dill, wagyu beef sliders, and guinea fowl skewers with sesame, chilli, and miso. Whether you’re staying at the bar or continuing the evening in the main restaurant, guests can expect the same signature Frantzén touch.
