Ranked No.3 in Middle East & North Africa’s 50 Best Restaurants, Dubai’s leading one-Michelin-starred progressive fine dining restaurant delves into the tastes and flavours of the Atlantic with its new menu.

DUBAI, United Arab Emirates – Ossiano invites guests to embark on a ‘Culinary Voyage’ with its new 10-course tasting menu, crafted by Chef Grégoire Berger. This journey is one of exploration and discovery, where each course reveals the rich, diverse flavours of the Atlantic’s coastal regions, from the vibrant markets of Seville to the tranquil shores of Brittany. Inspired by the stories of those who once navigated the Atlantic Ocean and guided by the creativity and passion of its captain, the menu is a narrative and a journey.

The menu is presented with a culinary compass inspired by a planisphere. By rotating the disks, diners can explore the origins of each dish, transforming their dining experience into an interactive and educational journey. This innovative design encourages guests to delve deeper into the story behind each course, reflecting the restaurant’s North Star philosophy. By connecting diners with the heritage of each ingredient, Ossiano elevates the meal into a voyage of global discovery.

Upon arrival, guests are greeted with a delicate coral-shaped snack – a symbolic start to their journey. This intricate creation mirrors the beauty of ocean reefs and serves as a reminder of the deep connection between the sea and the flavours that will unfold throughout the evening. Following this, guests are treated to a selection of beautifully crafted canapés, setting the stage for the 10-course tasting menu, which includes highlights such as a blue spirulina-coated meringue filled with Sicilian purple prawn tartare, and a nori tartlet featuring dry-aged yellowtail with wasabi ice cream, complete with umeboshi-flavoured sesame seeds.

 

The ‘Culinary Voyage’ menu continues with beautifully presented dishes including scallops accompanied by white corn, almond, and coconut, which gives a nod to South American cuisine. Guests will savour the silky texture of beef Cecina with creamy Spanish flavours, Brittany squid infused with Latin American influences, as well as Norwegian langoustine, where the sweetness of passionfruit balances the heat of jalapeño. For the main course, diners may choose between the iconic Croque Monsieur, inspired by the coastlines of Brittany, or the Welsh lamb tagine enriched with rose and mint. To cleanse the palate, a refreshing dessert of Obleas with banana, dulce de leche, and pineapple – a celebration of Colombian tradition – is served, followed by an indulgent chocolate offering to complete the experience.

Located at Atlantis, The Palm, Ossiano seats just 54 guests per evening, making it one of the region’s most exclusive and unique dining destinations. Upon arrival, guests descend into a stunning subterranean dining room, submerged 10 meters below one of the world’s largest aquariums. Surrounded by a breathtaking underwater vista, Ossiano transports diners to the depths of the ocean, offering a dining experience that is both visually and sensorially unforgettable.

Reservations for ‘A Culinary Voyage’ are now open daily from 6:00pm to 1:00am (last seating at 9:00pm). The experience includes a 10-course tasting menu, priced at AED 1,250.
