Dubai, UAE -: One&Only The Palm is set to host Four Chefs, One Table, an exquisite epicurean event at the world-renowned STAY by Yannick Alléno on April 5th and 6th, 2024. The exclusive dining experience will bring together four culinary virtuosos, promising an evening of unparalleled gastronomic delight through 8 curated courses.
Perfectly fitting with his recent award as the Chef Mentor by Michelin Guide France 2024, the legendary Yannick Alléno leads the ensemble. Chef Yannick brings a unique depth and strength to the concept with 16 MICHELIN stars on his portfolio, a career spanning over four decades, and his continuous drive to redefine and elevate modern French cuisine.
Introducing Chef Maxime Guilbert, who is the Executive Chef at ÉCRITURE by Le Comptoir, where he elevates French cuisine by uniting it with exceptional Japanese produce. Chef Julien Tongourian is the Executive Chef, overseeing two three-Michelin-starred restaurants, L’Atelier de Joël Robuchon in Hong Kong and Robuchon au Dôme in Macau. Pastry Chef Narae Kim crafts delightful desserts at Park Hyatt Paris-Vendôme’s Michelin-starred restaurant Pur’ – Jean-François Rouquette and Café Jeanne in Paris.
Chef Maxime Guilbert, acclaimed for his innovative culinary approach, has collaborated closely with Yannick Alléno, sharing a passion for culinary innovation. Guilbert worked under Chef Alléno at the three Michelin-starred Meurice Paris, where his cuisine blends traditional techniques with exceptional ingredients, earning him accolades such as two Michelin Stars for ÉCRITURE by Le Comptoir. Chef Julien Tongourian, with his deep understanding of French culinary traditions, complements Yannick Alléno’s vision with his expertise and creativity. Having worked at Meurice Paris with Chef Alleno, who then influenced his cooking techniques, Tongourian is the Executive Chef of L’Atelier de Joël Robuchon Hong Kong and Robuchon au Dôme in Macau. He oversees two three Michelin-starred restaurants, making him the only chef with this accolade in the MICHELIN Guide Hong Kong and Macau 2023 & 2024. Adding a sweet touch to the evening’s affair is Pastry Chef Narae Kim, recently honoured as Pastry Chef of the Year 2024 by Gault & Millau France. Her creations are set to enchant diners and provide the perfect conclusion to the gourmet symphony. Chef Narae Kim brings a wealth of experience, having worked at the YA Group from 2018 to 2021 as a Pastry Sous Chef. The collaboration of Maxime Guilbert, Julien Tongourian, and Narae Kim with Yannick Alléno at STAY by Yannick Alléno represents an exceptional occasion.
The 8-Hands Dinner will showcase an 8-course menu, expertly crafted to harmonise each chef’s distinctive styles and influences. The menu includes an Amuse Bouche by Alléno featuring sweet clover jelly with fresh walnuts and fig oil vinaigrette, followed by a Uni Tart by Maxime Gilbert, which includes Hokkaido sea urchin, celeriac purée in buckwheat shell and beurre blanc sauce. Julien Tongourian presents stewed morels with foie gras and chervil, while Maxime Gilbert offers a Ratatouille of Indigo tomato “Enratatouil” wrapped in kombu with aromatic herbs, essences and rooibos tea perfume. Julien Tongourian will serve Brittany Lobster with “Bouillabais” of princess peas, followed by Alléno’s Milk Fed Lamb Rac “Viller” with gratinated Belon oyster and shallots reduction. For dessert, Pastry Chef Narae Kim will plate a pre-dessert of Raw Milk Ice-cream with fennel, pollen, and citrus, followed by a decadent dessert of Cocoa Gavottes with Peruvian chocolate cremeux, coffee and black cardamom ice cream, finished off with Bailey’s milk emulsion.

Guests can dine in ChefYannickAlléno’sss presence at One&Only The Palm on the 5th and 6th of April and dive into the 8-course menu priced at AED 2,000 without beverage pairing or AED 3,200 with premium wine pairing. Seating is limited, and reservations are required to secure a place to witness and immerse themselves in the gastronomic spectacle.
