Celebrity Chef Yannick Alléno partners with world-renowned caviar brand Prunier to design a special menu celebrating fine dining at its prime

Proudly retaining two MICHELIN-stars for the third consecutive year, STAY by Yannick Alléno at One&Only The Palm has collaborated with Prunier to weave three centuries of caviar expertise into a specially curated six-course menu. Inviting guests to indulge in the exclusive experience “A journey with Yannick Alleno and Prunier” on 2 and 3 November, the creations celebrate one of the most sumptuous culinary ingredients, caviar, effortlessly blended with Chef Yannick’s savoir-faire.

Settling into the dramatic monochrome dining room, gastronomes embark on the journey with Artichoke Ice Cream with Prunier Caviar served with pine jelly and hazelnut oil, followed by the rich flavours of Consommé Alain Chapel with Prunier caviar, crispy tuile and buckwheat. The high timber theatrical walls and the extravagant palette of black bronze and silver interiors exude elegance and taste, perfectly complementing the upcoming courses, including Langoustine Tarte with Prunier Caviar and ginger beurre blanc, Seabass Badaboum with Prunier Caviar served with an earthy mushroom broth and Isigny cream and the Crispy Veal Sweetbread with Prunier caviar, burrata and condiments. A surprising conclusion to the experience is the Pear in Meringue Crust with almond and Sauternes sorbet and Chocolate tarte featuring caviar and ganache.

Price: A journey with Yannick Alleno and Prunier menu is priced at AED 1600 per person without wine pairing and AED 2550 with wine pairing
